The Bar Necessities

Triple Citrus Tequila
Makes 3/4 liter
1 750-ml bottle good-quality silver tequila
Zest of 1 lg. orange, removed in 1 long, thin strip with a peeler
Zest of 2 lg. lemons, removed in long, thin strips
Zest of 2 lg. limes, removed in a long, thin strip
Pour out and reserve about 1/2 c. of the tequila. Add citrus zests to the tequila. Return the reserved tequila to the bottle, cap, and let stand, agitating the bottle occasionally, for 48 hours before using. Freeze for long-term storage.
