Rafael Palomino's Yuca Fries
Serves 8
4lbs. peeled fresh or frozen yuca, cooked
Canola oil for deep frying
1Kosher salt for sprinkling

Cut yuca into 1/2-inch-thick slices. Preheat oven to 250 degrees F. and place oven-proof serving platter inside. In deep, heavy pot or deep fryer, heat 2 inches of oil to 365 degrees F.

Fry small batch yuca for 3 to 5 minutes, or until lightly browned. Using a skimmer, transfer to paper towels to drain, then to large bowl.

Sprinkle with salt and toss lightly with your hands. Transfer to platter in oven. Repeat to fry remaining yuca. Serve immediately.
