Caribbean Dream

House specialty glass, chilled

1 oz. Bacardi Superior Light Rum

¾ oz. Disaronno Amaretto

¾ oz. White Creme de Cacao

¾ oz. fresh lime juice

½ cup pineapple cubes

3 oz. pineapple juice

2 scoops vanilla ice cream (4–6 oz. ea)

¾ oz. Appleton Estate V/X Jamaica Rum for float

Pour into an iced blender canister. Blend thoroughly. Float Rum. Garnish with pineapple wedge.
