Cochinita Pibil: Marinated Pork

Makes 4 to 6 servings
2 lbs. lean pork
3.5 oz. (one brick) Achiote Del Mayab
1/3 c. Lemon Juice
½ c. of water
Banana Leaves (available in Latin or Asian markets) or aluminum foil
Dissolve Achiote Del Mayab with lemon juice and water. Pour the mixture over the pork and marinate for 3 hours or overnight. If using banana leaves, cut into pieces to fit a roasting pan. Remove the center ribs from the leaves and use for tying. Lay a couple of strings (long enough to tie around the pork) along the bottom of the roasting pan. Place leaves on top of strings then place pork and marinade on top of leaves. Fold the banana leaves over pork and tie with the strings. Cover the pan and bake in 325 degree oven for 1 to1½ hours. Serve with rice, warm corn tortillas, black beans and Cebolla Roja Encurtidas (marinated onions).
